Basic vegan and gluten free cake

Deze cake hebben Johann en ik maar bestempeld als basis cake. Het leent zich voor elk fruit, topping of saus. Hij is makkelijk te maken en heeft een heerlijke structuur en smaak. Ik weet zeker dat de fans van de ontbijtcake deze ook zullen waarderen. Wat kan ik zeggen behalve: maak deze cake?
Vegan, glutenvrij, notenvrije optie
Ingrediënten:
100 g rijstmeel
65 g amandelmeel ( of gebruik tijgernoten meel voor een notenvrije versie, de naam is verwarrend want tijgernoot is geen noot, vermoeiend, ik weet het)
25 g maïzena
1.5 tl bakpoeder
1 tl kaneel
snuf zout
75 g kokosolie/boter gesmolten
85 g kokosbloesemsuiker
2 bananen, gepureerd
1 appel als topping maar denk ook eens aan pruimen of peren
Verwarm de oven voor op 180 graden en bekleed een springvorm (doorsnede 20 cm) met bakpapier. Meng de rijstmeel met amandelmeel, maïzena, bakpoeder, kaneel en zout. Meng in een andere kom de natte ingrediënten: kokosolie, suiker en banaan. Meng goed door elkaar en voeg toe aan de rijstmeel mix. Roer tot een glad beslag. Leg de partjes appel boven op de cake en bak de cake gaar in 30-35 minuten.
Johann and I have labelled this cake our basic cake. It goes perfectly with any type of fruit, topping or sauce. On top of that it is also very easy to make and has great texture and taste. And I know that people who love breakfast cake will also definitely enjoy this one. What else can I say except…. bake this cake!
This recipe is vegan, gluten free and can also be made as a nut free version.
Ingredients:
100 g rice flour
65 g almond flour (or use tigernut flour for a nut free version. The name is quite confusing because tigernuts aren’t actually a type of nut. Annoying, I know)
25 g cornflour
1.5 tsp baking powder
1 tsp cinnamon
Pinch of salt
75 g (melted) coconut oil/butter
85 g coconut blossom sugar
2 bananas, mashed
1 apple for the topping, but you may also like using prunes or pears
Preheat the oven at 180 degrees and line a cake tin (20 cm in diameter) with baking paper. Mix the rice flour, almond flour, cornflour, baking powder, cinnamon and salt together in a bowl. In a different bowl, mix the wet ingredients together: the coconut oil, sugar and bananas. Mix this thoroughly before adding it to the rice flour mixture. Stir until a smooth mixture has been created. Pour this into the cake tin, place some apple slices on top, and bake the cake for 30-35 minutes in the oven
