The classy editon of our breakfast cake
Een van ons meest favoriete recepten is de ontbijtcake. We maken dit recept inmiddels meer dan 8 jaar en het verveelt eigenlijk nooit. Het blijft ook zo leuk om te zien hoe veel lezers van onze blog dit recept ook maken en zelfs dat er speciale verzoekjes zijn van de kinderen voor ontbijtcake.
Maar nu tijd voor een wat luxere versie al scheelt het niet veel van de originele ingrediënten. Door eerst de appels te bakken in de koekenpan worden de appels extra gekarameliseerd en geeft het iets meer een “taart gevoel”dan cake. Hij blijft verder simpel en zeer vergevingsgezind. Hoop dat iedereen hier net zo geniet als van de old skool versie.
Vegan en glutenvrij
Ingrediënten:
3 flinke appels
1 flinke el kokosolie
2 el agave siroop, of zoetmaker naar keuze
175 g amandelmeel
85 g zelfrijzend bakmeel, wij gebruikten de glutenvrije editie van Dove’s farm
1.5 tl bakpoeder
1 el kardemom
snuf zout
4 el appelmoes
40 g kokosolie
1 el arrowroot of maïzena
100 g agave siroop
40 g amandelschaafsel
springvorm, doorsnede 23 cm
Verwarm de oven voor op 175 graden en bekleed de springvorm met bakpapier. Snijd de appel in partjes en bak in een koekenpan in de eetlepel kokosolie en 2 eetlepels agave siroop. In principe kun je de agave altijd vervangen voor een andere siroop. Bak de appels totdat ze zacht en lichtbruin zijn gekleurd.
Mix dan in een kom alle bovenstaande ingrediënten behalve het amandelschaafsel. Net zoals bij de ontbijtcake krijg je een dik, plakkerig deeg waarvan je denkt dat het nooit meer goed komt. Verdeel het beslag over de springvorm en plaats dan de gebakken appels erop. Maak het af met amandelschaafsel en bak de cake in 35-45 minuten gaar. Laat de cake afkoelen voordat je hem uit de vorm haalt en geniet.

Well that and having an extra reason to bake a cake. This version is a bit more “classy”. With baking the apples first you caramelize the apples which improves the flavour. Ingredients are pretty much the same and it is still quite easy to make.
Vegan and gluten free
Ingredients:
3 apples
1 tbs coconut oil
2 tbs agave syrup, or syrup of choice
175 g almond flour
85 g self raising four, we used the gluten free version by Dove’s farm
1.5 tsp baking powder
1 tbs ground cardemom
pinch of salt
4 tbs apple sauce
40 g coconut oil
1 tbs arrowroot
100 g agave syrup
40 g almond slivers
cake tin, 23 cm in diameter
Preheat the oven at 175 degrees and line the cake tin with baking parchment. Slice the apples and bake in a frying pan in the tablespoon of coconut oil and the 2 tbs agave syrup. You can use any syrup you like. Bake the apples until they become soft and colour light golden brown. Set them aside.
Mix in a bowl all of the ingredients except for the almond slivers. The batter is thick and sticky and you might think that the cake will fail. It will not, I promise. Divide the batter over the cake tin, place the baked apples on top. And finally sprinkle the almond slivers over the cake. Place the cake in the middle of the oven and bake for about 35-45 minutes or until the cake has gained a golden brown colour. Leave to cool before removing the cake tin and then enjoy.
