This pie has been quite the project. We began working on it last year for my birthday in January and only now , a year later, I can finally say we did it: a vegan and gluten free lemon meringue pie. We have had to deal with terrible crusts, aquafaba that tasted like kitchen soap, and a filling that was way too sweet, lumpy, and did not actually stay in the pie when you cut a slice.
