This delicious almond organge cake is inspired by the cookbook of Mundekulla. An eco retreat and course center in Sweden. It released it’s very own cookbook, available in Dutch, Swedish and English. With more than 70 vegetarian recipes inspired by their own garden, farmers around the area and the people that work there. I love the photography of the book and I love this cake even more.

Don’t let the boiling of the oranges ( yes for more than an hour) stop you. This cake is simple to make but a pure treat and great to share with family and friends. I am planning to make it again for Easter Sunday
