Our aim with Food Bandits is to share some delicious cakes and pies, occasionally a dinner recipe - which is somehow always way more popular than cake recipes - and to provide allergen friendly options. Baking vegan and gluten free is not that difficult once you know the tips and tricks or in other words: the chemistry behind baking (also we have a whole series on the blog about that subject , bet you didn’t know in school that baking a pie equals chemistry). Eating more plant based is the future but it doesn’t mean that vegan is always better..until this cake came along and now I can safely say: vegans? They do it better.

Almond and orange cake

This delicious almond organge cake is inspired by the cookbook of Mundekulla. An eco retreat and course center in Sweden. It released it’s very own cookbook, available in Dutch, Swedish and English. With more than 70 vegetarian recipes inspired by their own garden, farmers around the area and the people that work there. I love the photography of the book and I love this cake even more.

Don’t let the boiling of the oranges ( yes for more than an hour) stop you. This cake is simple to make but a pure treat and great to share with family and friends. I am planning to make it again for Easter Sunday

Three tier chocolate cake

For a blog that specializes in pies and cakes, my birthday cakes are generally surprisingly bad. There’s photographic proof of this on Instagram, where we just ended up sticking some sparklers in the cake, because it was really just that terrible. In the end, it took us a whole year to improve last year’s lemon meringue cake. But now I do have one (although it’s not the prettiest thing and the bad January lighting doesn’t help matters either) that’s actually good! It tastes delicious and: I have a birthday cake!

Christmas desserts

The holidays are knocking at the door and although I always start the Christmas season early in mid-November and consequently hate it by the time it’s actually there and would much rather just eat pizza, I do wish to draw your attention to some great and easy desserts this year (read: chocolate cakes, always a good choice). These cakes are gluten free and vegan, so you know for sure that everyone can enjoy them!

When we first found this recipe at Tasty Yummies, I could not believe that a recipe this simple, could taste that good. This recipe is quite simply perfect and I do recommend this as a “must try.” Vegan and gluten free, oh and all the chocolate goodness.

Vegan strawberry coconut cake

A summery cake from our cook book Andere Koek. This cake is vegan, gluten free and smells wonderful. Especially the recipe for the crust is something to remember - you can also use it with all kinds of different fillings!

Silken tofu cheesecake

Not that long ago, I got a message from Suus from Puur Suzanne, who told me she had finally found the recipe for the best vegan cheesecake of all time. As any serious food blogger should, she put her own twist on it and also sent me the original recipe, so I could be creative with it as well. First, I followed the original recipe to try it out for myself, and honestly, I sold from the very first bite. Suus wasn’t lying: this is the best vegan cheesecake of all time
