Today we’ve finally arrived at the fourth part of our Chemistry of Baking series. We always say “everything is chemical” (you, me, your neighbour, and literally everything around you) and you can see this most clearly during baking. You have your basic ingredients and you change their chemical properties with heat in the oven to create a wonderful cake. It’s the ultimate definition of what chemistry is. Today, we’ll be discussing the role of fat in the baking process. What is it’s function?

I could try to come up with a whole story, but honestly, we don’t have such adventurous lives and one day Johann simply said: “today I want to bake an almond orange cake”. And then he did. The second version of this recipe was even better than the first and the consistency of the cake was a lot more airy than it was on the photo, which is why we decided to put the second version of this recipe up here for you to enjoy!

At home

Het is even stil geweest op onze blog. Maar de verhuizing, verbouwingen naast ons oude en ironisch genoeg, nieuwe huis, het maken van een kookboek, workshops en nieuwe projecten maakte dat we niet toe kwamen aan heerlijk rommelen in de keuken. En hoewel de extra frieten, repen chocolade en glazen wijn heerlijk waren zijn we nu wel weer toe aan wat gezonder eten. Al blijft de definitie voor gezond altijd relatief.

Ultimate chocolate pie

Whoa alweer het einde van onze kerst reeks met recepten. Ik hoop dat je inmiddels al je menu rond hebt waarbij je niet te lang in de keuken hoeft te staan of eerst 35455555 supermarkten hoef te bezoeken. Er is tenslotte niks mis met een lekkere pizza en zolang het een beetje gezellig is met kerst heb je al een fijne dag te pakken. Johann en ik hebben wel eens wat friet in de oven gegooid, een spuuglelijke joggingbroek aan gedaan en een stapel dvd's gekeken. Was een zeer ontspannen kerst kan ik je vertellen.

We are back

Na 7 jaar te hebben geblogd was een kleine break wel op zijn plaats maar toch miste ik het wel om gekke quotes te delen, al beloof ik dat de 'live, laugh, smile' -achtige quotes hier nog steeds niet gedeeld zullen worden, een grafbek geniet nog steeds mijn voorkeur- om wat uitgebreider te kunnen schrijven over een recept of waar wij met Food Bandits mee bezig zijn,
