Mijn verjaardag vind ik niet altijd makkelijk. Ik sta dan vaak stil bij weer een jaar ziek zijn. Niet dat ik ziek werd op mijn verjaardag maar ik realiseer mij dan altijd dat er weer een jaar voorbij is zonder herstel en zonder de dingen die ik zo graag zou willen doen.


Een paar jaar geleden lag ik op mijn verjaardag op de bank, en dit zoals eigenlijk alle dagen, ik weet zeker dat ik doodga met een platter achterhoofd ;) en viel er een dikke envelop in de bus. Daarin zaten - en nog helemaal heel- heerlijke, zelfgebakken havermout koekjes van Barbara van De wereld van Fien. Samen met een lief kaartje voelde ik mij helemaal jarig. Het was zo bijzonder om zelfgebakken koekjes te krijgen en sindsdien sturen Johann en ik ook koekjes op naar mensen die wel even een steuntje in de rug kunnen gebruiken of als ‘dank je wel.’ Het laatste bedankje ging naar onze pakketjes bezorger omdat ze altijd koekjes voor Moos de teckel heeft. Hij volgt zelfs haar Post.nl bus door het dorp en presteert het dan om te wachten tot ze uitstapt zodat hij weer een koekje krijgt. Je snapt dat zij wel deze koekjes verdiende.

Het recept wat Barbara heeft gebruikt en wij ook gebruiken is van My new roots. Ik heb al een eerder verteld dat als je meer plantaardig zou willen eten haar blog en boek echt de juiste start is. Het is namelijk onwijs lekker en zou zo eten altijd moeten zijn.

Salt ‘n pepper chocolate chip cookies

Vegan en glutenvrij, 16 stuks

Ingrediënten:

- 80 ml kokosboter/olie
- 80 ml rijstsiroop
- 2 el water
- 1 tl vanille extract
- 250 g havermout
- 60 g kokosbloesemsuiker
- snuf zout
- snuf zwarte peper
- 0.5 tl baking soda
- 2 tl bakpoeder
- 70 g gehakte, pure chocolade

Verwarm de oven voor op 170 graden en bekleed een bakplaat met een vel bakpapier. Maal in de keukenmachine de havermout tot een fijn meel en strooi dit in een beslagkom. Laat in een steelpan de kokosolie smelten en voeg dan het water, rijstsiroop, en vanille toe. Roer dit goed door elkaar.

Voeg aan de fijngemalen havermout de suiker, zout, peper, baking soda en bakpoeder toe. Roer ook dit goed door elkaar en voeg dan de kokosolie-mengsel toe. Vermeng alles en voeg dan als laatste de fijngehakte chocolade toe. Maak dan koekjes van het deeg en zorg dat er tussen de koekjes minimaal 5 cm ruimte is omdat ze erg kunnen uitlopen. Maak de koekjes eventueel af met wat extra grof zeezout en bak ze in de oven gaar in 13-15 minuten. Haal de koekjes uit de oven en laat ze geheel afkoelen. Vijf dagen houdbaar (als je dat al redt) in een afgesloten box.

My birthday isn’t always an easy day for me. Usually it reminds me that another year has gone by that I’ve been ill. Not that I got ill on my birthday or anything, but that day always reminds me that another year has passed where I didn’t get any better and I didn’t get to do those things that I’ve always wanted to do.

A couple of a years ago, I was spending my birthday laying on the couch, just like another other day (I know I’ll die with a flat head), when a big envelope fell through our letter box. Inside it, there were (still completely whole) homemade oatmeal cookies from Barbara from De Wereld van Fien (literally translated: Fien’s World). She had sent a sweet little birthday card along with it and that’s when I truly felt like it was my birthday. It was so special receiving freshly made cookies like that, and since then Johann and I have also been sending cookies to people who we feel is in the need for a little support, or as a way to say “thank you”.

Our most recent batch of “thank you” cookies, were our postwoman. She always brings biscuits along with her for Moos the Dachshund, and Moos even follows her bus through the entire village. He only just manages to wait patiently as she gets out, so she will give him a treat. No need to explain any further why she deserved a batch of homemade cookies.

The recipe that Barbara had used, and that we use now as well, comes from the blog My New Roots. I have said before that if you want to start eating more organically, her blog and book are a great place to start. Everything she makes is delicious and exactly how food is supposed to be.

Salt ‘n black pepper chocolate chip cookies

This recipe is vegan and gluten free.

Makes 16.

Ingredients:

  • 80 ml coconut butter/oil

  • 80 ml rice syrup

  • 2 tbsp water

  • 1 tsp vanilla extract

  • 250 g oatmeal

  • 60 g coconut blossom sugar

  • Pinch of salt

  • Pinch of black pepper

  • ½ tsp baking soda

  • 2 tsp baking powder

  • 70 g dark chocolate, chopped


Preheat the oven at 170 degrees Celsius and line a baking tray with a sheet of baking paper. In a food processor, grind the oatmeal into a powder-like consistency and scatter this on the bottom of a mixing bowl. Melt the coconut butter in a sauce pan, before adding the water, rice syrup and vanilla extract. Mix this thoroughly. Then, add in the ground oatmeal along with the sugar, salt, pepper, baking soda and baking powder. Stir thoroughly. Next, add the coconut-oil mixture and mix everything together, before adding the chopped chocolate.

Make the cookies and place them on the baking tray with a minimum distance of 5 cm between them, as they can rise a lot. If you like, you can top them off with some sea salt, before baking them for about 13-15 minutes in the oven until done. Once baked, remove the cookies from the oven and leave them to cool. You can store them for about five days (if you haven’t finished them before then) in an airtight tin.
