Een klassieke kerst cake wordt in Nederland niet zo heel vaak gemaakt want eigenlijk ontzettend zonde is want hij is onwijs lekker. En de smaken doen je direct denken aan kerst.

Het leek ons een te gekke uitdaging om een vegan en glutenvrije versie te maken. En ook nog eens een snelle versie indien je stir up Sunday hebt gemist. Het verwarmen van de ingredienten maakt dat de smaak intensiver wordt en je nog blijer wordt van alle kruiden, de sinaasappel en koffie. Ik weet in ieder geval zeker dat wij deze cake met kerst opnieuw maken!

Vegan, glutenvrij, 1 cake

Ingrediënten:

  • 60 ml koffie

  • 60 ml whiskey

  • 250 g rozijnen

  • 150 g sultana’s

  • 350 g gedroogde pruimen, ontpit en in stukjes gesneden

  • 175 g kokosbloesemsuiker

  • 50 g rijstsiroop

  • 4 el cacaopoeder

  • 1.5 tl gember

  • 1.5 tl kardemom

  • 2.5 tl kaneel

  • rasp en sap van 2 sinaasappels

  • 165 g kokosboter

  • 125 g zelfrijzend glutenvrij meel

  • 110 g amandelmeel

  • 0.5 tl bakpoeder

  • 0.5 tl baking soda

  • 3 vegan eieren (poedervorm)

  • springvorm 20 cm doorsnede

Voor dit recept moet je een vel bakpapier gebruiken voor de zijkant en één voor de bodem. Het bakpapier moet boven de vorm uitkomen zodat de bovenkant niet te snel gaart.

Meng in een grote pan de: koffie, whiskey, rozijnen, sultana’s, pruimen, suiker, siroop, cacao, gember, kardemom, kaneel, sinaasappel en kokosboter. Verwarm de ingrediënten langzaam en laat dit 10 minuten zachtjes pruttelen terwijl je het omroert.
Laat het mengsel vervolgens 30 minuten afkoelen.

Verwarm de oven voor op 150 graden. Voeg dan de meel, amandelmeel, bakpoeder, baking soda en vegan eieren toe. Meng het geheel goed door elkaar. Giet het beslag in de springvorm en bak de cake in anderhalf uur gaar. Laat volledig afkoelen voordat je de vorm eraf haalt. En hier heb je de meeste heerlijke cake!

In The Netherlands, a classic Christmas cake isn’t actually all that common during Christmas, which is a terrible shame if you ask me, considering just how delicious these cakes are. Not to mention that the flavours immediately put you in the holiday spirit.

It seemed like a nice challenge for us to try to create a vegan and gluten free version of this classic Christmas treat. And a quick bake version of it too, just in case you still need to catch up on Stir Up Sunday. The heating up of the ingredients makes the flavours even stronger, which will make you even happier when you taste all those wonderful spices, the orange and the coffee. I, at least, know for certain that we’ll be making this cake again for Christmas.


Vegan, gluten free, 1 cake


Ingredients:

- 60 ml coffee

- 60 ml whiskey

- 250 g raisins

- 150 g sultanas

- 350 g dried prunes, unpitted and chopped

- 175 g coconut blossom sugar

- 50 g rice syrup

- 4 tbsp cacao powder

- 1.5 tsp ginger

- 1.5 tsp cardamom

- 2.5 tsp cinnamon

- zest and juice from 2 oranges

- 165 g coconut butter

- 125 g self-rising gluten free flour

- 110 g almond flour

- 0.5 tsp baking powder

- 0.5 tsp baking soda

- 3 vegan eggs (powder)

- spring cake tin, 20 cm in diameter

For this recipe, you must line both the bottom and the sides of the cake tin with a sheet of baking paper. The paper must stick out above the tin, so the top won’t cook too quickly in the oven.

Mix the coffee, whiskey, raisins, sultanas, prunes, sugar, syrup, cacao, ginger, cardamom, cinnamon, orange juice and zest, and the coconut butter together in a large pan. Gradually heat the ingredients on the stove, and leave this for 10 minutes, while you occasionally stir. Then, leave the mixture to cool for about 30 minutes.

Preheat the oven at 150 degrees Celsius. Add the flour, almond flour, baking powder, baking soda and the vegan eggs to the mixture and mix this thoroughly. Pour the mixture into the cake tin. Let the cake cook for half an hour in the oven until done. Do make sure you let it cool before you remove the tin. And there you have it! The most delicious Christmas cake!
