Ik hoop dat de lezers van Bakers and Fakers een fijn recept hier hebben gevonden en opnieuw moet ik benadrukken haar kookboek een must have is. This delicious almond organge cake is inspired by the cookbook of Mundekulla. An eco retreat and course center in Sweden. It released it’s very own cookbook, available in Dutch, Swedish and English. With more than 70 vegetarian recipes inspired by their own garden, farmers around the area and the people that work there. I love the photography of the book and I love this cake even more.

Don’t let the boiling of the oranges ( yes for more than an hour) stop you. This cake is simple to make but a pure treat and great to share with family and friends. I am planning to make it again for Easter Sunday

Hummus, the real deal

I think most of us know by now that many store bought hummus isn’t really hummus. More of a scavenger hunt for three chickpeas, a lot of oil, if you are lucky some sesame paste. Start a garden

Our dream was to have a small farm with lots of land and lots of peace and quiet. While this didn’t work out exactly, with only 500 m2 for a garden, having a forest in front of the house and behind it isn’t bad either. Our next dream was to have our own vegetable plot to grow our own food, because organically homegrown vegetables just taste better! We also have a basement where we can keep many, many preserve jars filled with pickled vegetables, and we are able to share our harvest with others, so more people can enjoy how great homegrown food is…

Rhubarb lemon cake

A few days ago, we had our first couple of warm days of the year (not a fan, and not happy). We ate our first asparagus and turnips, and now the time has come for rhubarb. A while ago we made a rhubarb compote to go with this wonderful cheesecake, and now we have created a lovely lemon rhubarb cake.

This cake tastes wonderfully fresh and a little sour, but I think that’s what makes rhubarb actually taste like rhubarb.

This year with Food Bandits, we started to focus a lot more on things that you can do to be more considerate of the environment. And we didn’t just discuss different types of cleaning products, laundry detergent, or plantbased foods, but we also explained the chemistry behind all those things. We decided to do this mainly because we so often read nonsense claims about chemistry that we are certain are meant well, but which don’t really end up helping anyone at the end of the time. So, yes, those lefties (and, yes, we’re also a part of that group) can be a bit crazy at times. But whether you vote left wing or right wing, I think we can all agree that we’re in the middle of an urgent climate crisis right now.

Breakfast cake

This recipe is a true Food Bandits classic. Make this recipe once and you won’t be able to stop. It’s so easy, so delicious and is forgiving when you make a mistake. On top of that, this cake is my cat Lola’s favourite. Doing more for the environment on a small budget. There’s actually a lot you can do. I believe that we as consumers have the power and ability to make a difference, even just by doing the little things. For example, I have had many arguments with my neighbour, who used to give a lot of loud and highly annoying parties. His excuse for this was that he only did this a couple of times a year. My answer to this was that if all 17 million people in The Netherlands thought the same way, no one would ever get any sleep anymore. In short, you can make a difference! An argument you often hear about why people find it difficult to live more environmentally friendly, is money. Many organic products – whether it’s food, clothes, or cosmetics – are more expensive than the regular products. And sadly, that is the truth. Sometimes I read pieces from brave blogger who come up with all sorts of theories to prove that actually, when you look at your total expenses, this is not true. The cookies we send

A couple of a years ago, I was spending my birthday laying on the couch, just like another other day (I know I’ll die with a flat head), when a big envelope fell through our letter box. Inside it, there were (still completely whole) homemade oatmeal cookies from Barbara from De Wereld van Fien (literally translated: Fien’s World). She had sent a sweet little birthday card along with it and that’s when I truly felt like it was my birthday. It was so special receiving freshly made cookies like that, and since then Johann and I have also been sending cookies to people who we feel is in the need for a little support, or as a way to say “thank you”.

How to start eating healthy

Tonics, serums, detox, healthy lifestyles are booming business right now and trying to live accordingly seems to be getting more and more complicated.
